Pumpkin soup.

 
1/2 butternut squash peeled and sliced into 2" cubes
 
3 shallots whole
 
2 cloves garlic leave whole in skin
 
1 small piece of ginger about the size of walnut
 
1 teaspoon of oil
 
1/2cup dessiccated cocnut
 
1 litre vege or chicken stock
 
1 can coconut cream
 
salt and pepper to taste
 
1 teaspoon of thai five spice
 
chives to garnish
